Our food philosophy

We recognise that our customers are more and more interested in the quality and provenance of the food they eat and that is why we provide complete menu transparency.

We only source from respected suppliers who are responsible, sustainable and have a proven track record of animal welfare. This traceability is the only way of ensuring the highest quality ingredients and our ‘back to basics’ style of cooking allows the true flavours of our meat, fish and vegetables to shine through.

We produce all our own charcuterie, chutneys, pickles, bread and ice-cream. We are also creating a herb garden that you are welcome to visit.

Pughs Piglet, Garstang, Preston
Food supplied to us by this established family-run business is provided on a “just in time” basis. Barry Pugh personally selects and purchases each and every pig, and the time from farm to table is usually no more than three days.

Frost Butchers, Chorlton, Manchester
Dedicated to sourcing quality local produce, these award-winning butchers started selling meat in 1910. The business is still in the family and growing from strength to strength. Frosts won the Manchester Food and Drink Award for Best Food and Drink Outlet 2011.

Carroll’s Heritage Potatoes, Cornhill-on-Tweed, Northumberland
At Tiptoe Farm in the beautiful River Till Valley in Northumberland, North East England, they grow over 17 varieties of Heritage Potatoes. Each one is specially grown to provide you with gourmet eating qualities - excellent flavours, textures, colours, shapes, and a taste of history.

Anna’s Happy Trotters, Howden, Yorkshire
These free-range pigs are reared outside in the fresh Yorkshire air, resulting in happier animals and better quality, tastier meat. They recently won one of the most prestigious awards in the industry: Pig Producer of the Year 2010.

Johnson and Swarbrick, Goosnargh, Preston
Sole producers of Goosnargh Duckling and Cornfed Chicken, Johnson and Swarbrick have been supplying fine poultry for the past 30 years.

Noone & Son, Smithfield Market, Manchester
Based in Manchester’s Smithfield Market, Noone & Son are specialised producers which means they source only the very best quality fruit and vegetables they can find.

First Harvest, Middlewich, Cheshire
First Harvest is run by a husband and wife team who are passionate about growing microherbs and microgreens to the highest standard, giving customers the freshest, highest quality produce.

Keltic Seafare, Dingwall, Ross-shire
All of our shellfish are caught from Class A waters off the West Coast of Scotland. Keltic Seafare specialise in the supply and delivery of diver-caught scallops, langoustine, lobsters and crabs.
